Mexican cuisine: simple recipes for every day

Mexican cuisine is a unique synthesis of culinary traditions of different peoples. It was formed under the influence of the culture of the Spaniards, the Aztecs, the Incas and small Indian tribes. National dishes are prepared from simple products: corn, potatoes, meat, poultry. All over the world they are loved for their rich taste, bright design and unique color.

Features of Mexican cuisine

Mais is the basis of national dishes. Soup, side dishes, bread, snacks and drinks are prepared from it. Important place in the hierarchy of Mexican products are legumes, tomatoes, sweet potato, avocados. Of meat products, the local population prefers chicken, pork and beef. But in Mexico, you can try and exotic dishes: stewed iguana, baked armadillo, larvae of red ants.

The pride of the national cuisine is snacks from fresh corn tortillas. This tacos, burrito, fachitos, enchilada. The filling for these dishes is prepared from beans, meat, cheese, sweet and hot pepper. Often they are added to the hot sauces, which include tomatoes, coriander and garlic.

Mexican soups resemble a thick soup. The composition of the dish includes vegetables, legumes, cereals, meat, spices. The essential ingredient is hot pepper. Soups are served with wheat or corn tortillas.

Pork with beans

A bright appetizing dish can be prepared for lunch or dinner. It is prepared quickly from affordable and inexpensive ingredients.

  • pork - 300 g;
  • canned beans - 300 g;
  • tomatoes in its own juice - 150 g;
  • sweet pepper - 2 pcs. ;
  • onions - 1 pc. ;
  • vegetable oil - 60 g;
  • bacon - 50 g;
  • canned corn - 50 g;
  • garlic - 2 cloves;
  • chili pepper - 1/4 pcs. ;
  • grated paprika - to taste;
  • salt - to taste.
  1. Cut the onions into half rings, and bacon in small pieces. Fry the products until golden brown.
  2. Pork cut into small pieces, and then fry in the fat left after bacon.
  3. Salt the meat, sprinkle it with the paprika.
  4. Combine the prepared foods and simmer them on low heat for several minutes.
  5. Add to them sweet and hot pepper, cut into strips.
  6. After 10 minutes, pour the products with tomatoes, add crushed garlic. Stew foods for 5-6 minutes.
  7. Add the canned corn and beans, mix the products and cook them under the lid for 3 more minutes.
Sprinkle the dish with herbs and serve it to the table.

Mexican Corn Soup

The simple dish turns out very tasty and satisfying. It is served with nachos chips prepared from dried cakes. If desired, the composition can include any vegetables and spices.

  • chicken broth - 1 l;
  • canned corn - 700 g;
  • fillet chicken boiled - 250 g;
  • leeks - 1 pc. ;
  • stalk of celery - 1 pc. ;
  • cornstarch - 50 g;
  • vegetable oil - 40 g;
  • salt - to taste.
Stages of preparation:
  1. Fry pieces of onions and celery on vegetable oil.
  2. Pour 700 ml of broth into the blender bowl, put corn and browned vegetables. Grind the products.
  3. Pour the mashed potatoes into a saucepan and boil it. Dilute the starch in the remaining broth, add it to the soup base.
  4. After 7-10 minutes, put into the soup slices of fillets, salt and spices.
Pour the dish over the plates. The treat can be decorated with thin slices of sweet pepper and twigs of fresh greens.

Quesadilla with cheese and chicken

A hearty dish is associated with fast food, but it is easy to cook at home from useful foods. Food can be served as a snack on a regular and festive day, as well as for a bachelorette party or a friendly party.

  • pork or chicken breast - 1 pc. ;
  • tortillas - 6 pcs. ;
  • hard cheese - 400 g;
  • tomatoes - 2 pcs. ;
  • red or yellow pepper - 1 pc. ;
  • onions - 1 pc. ;
  • sunflower oil - 100 g;
  • garlic - 3 cloves;
  • greenery - 0, 5 beam;
  • spices - to taste;
  • salt - to taste.
How to cook:
  1. Cut the meat into strips, and the onions into cubes. Fry the food until ready, season with spices and salt.
  2. Put in a frying pan chopped in small pieces of pepper and a plate of garlic.
  3. Scald the tomatoes with boiling water, peel and cut the flesh into cubes. Put the tomatoes to the rest of the foods, add chopped greens.
  4. Sprinkle half of the tortillas with grated cheese, put the top on top. Cover the workpieces with the remaining cakes. Fry the billets until they are browned on both sides.
Before serving, cut the quesadilla into 4 parts. The appetizer is well combined with tomato, sour cream and cheese sauces.
