Easter cake with cottage cheese

The dough for this baking turns out to be heavy and wet. Therefore, food is better to bake in low forms. From the specified quantity of products, 1 large cake or 4 small cakes is obtained.

  • wheat flour - 500 g;
  • cottage cheese - 450 g;
  • sugar - 300 g;
  • eggs - 4 pcs. ;
  • butter - 150 g;
  • raisins - 90 g;
  • lemon - 0, 5 pcs. ;
  • soda - 5 g;
  • Vanillin - to taste.
You will also need vegetable oil to lubricate the mold.

  1. Rub cottage cheese, combine it with sugar. Add melted butter, beaten eggs and sifted flour.
  2. Squeeze the juice out of half a lemon, put out the soda. Pour the raisins with boiling water for 10 minutes, then drain the liquid.
  3. Mix the prepared foods, add vanillin.
  4. Cover the bottom of the mold with parchment, grease the sides with vegetable oil. Fill the container with a test for 2/3. Bake a large cake at a temperature of 180 ° C for 45 minutes, and a small 25 minutes.
Serve with tea or coffee.

Coffee cake

  • wheat flour - 370 g;
  • butter - 300 g;
  • sugar - 200 g;

  • salt - 1 pinch.
How to cook:

  • white flour - 250 g;

  • sugar - 60 g;
  • lemon juice - 60 g;
  • butter - 50 g;
  • cashews - 50 g;
  • candied fruits - 50 g;
  • mint leaves - 20 g;
  • yeast dry fast-acting - 10 g;
  • salt - 5 g;
  • vanillin - 2 g.
  1. Combine the dry foods: sifted flour, sugar, baking powder, vanillin and yeast.
  2. Whip the eggs and mint leaves with a blender.
  3. Mix prepared foods with lemon juice and melted butter.
  4. Knead the sticky dough and leave it at room temperature for 2 hours. Add the nuts and candied fruits to it, then cover with a towel and let it stand for another 2.5 hours.
  5. Cook the cake for 40 minutes in the oven, preheated to 180 ° C.
Pour the cooled cake with sugar icing and sprinkle with confectionery sweets.
